Andre's Canada Day Lemon Bars

A nice tasty summer snack, often served at my Canada Day gatherings. Tastes like Lemon Meringue Pie, without the meringue, but in bar format

Shortbread Crust
- 1 cup Butter (unsalted, room temperature)
- ½ cup Icing Sugar
- 1 tsp Vanilla
- 2 cup Flour
- ¼ tsp salt
Lemon Filling
- 2¼ cup White Sugar
- 2 tbsp Lemon Zest (about 6-8 small lemons)
- ¼ cup Flour
- 6 Egg
- 1 cup Lemon Juice (from about 8 small lemons)
- 2 tbsp Icing Sugar
Shortbread Crust
Preheat the oven to 350℉
Line the greased 9x13 Baking Dish with Parchment Paper
In the Stand Mixer, cream the Butter and the Icing Sugar until well combined
Add in the Vanilla, Flour and Salt until well combined, and crumbly
Firmly press the the crust onto the Parchment Paper lined Baking Dish, ensuring full coverage across the bottom
Bake at 350℉ for about 17min, until barely golden brown
Lemon Filling
Add the Lemon Zest and White Sugar to a bowl and mix, using your hands, until well combined and fragrant
Add the Flour and whisk until well combined
Whisk in the Eggs and Lemon Juice until well combined
Combining into Bars
Pour the Lemon Filling into the warm crust
Bake for another 20-25min at 350℉, until the center is set, and the outsides are slightly jiggly
Cool at room temperature for about an hour
Chill in the fridge for at least 2 more hours
Before serving, sprinkle the Icing Sugar over the bars
