Andre's Canada Day Lemon Bars

A nice tasty summer snack, often served at my Canada Day gatherings. Tastes like Lemon Meringue Pie, without the meringue, but in bar format

Equipment

  • 1 9x13 Baking Dish (greased)
  • Parchment Paper
  • 1 Stand Mixer
  • 1 Zester

Ingredients
  

Shortbread Crust

  • 1 cup Butter (unsalted, room temperature)
  • ½ cup Icing Sugar
  • 1 tsp Vanilla
  • 2 cup Flour
  • ¼ tsp salt

Lemon Filling

  • cup White Sugar
  • 2 tbsp Lemon Zest (about 6-8 small lemons)
  • ¼ cup Flour
  • 6 Egg
  • 1 cup Lemon Juice (from about 8 small lemons)
  • 2 tbsp Icing Sugar

Instructions
 

Shortbread Crust

  • Preheat the oven to 350℉
  • Line the greased 9x13 Baking Dish with Parchment Paper
  • In the Stand Mixer, cream the Butter and the Icing Sugar until well combined
  • Add in the Vanilla, Flour and Salt until well combined, and crumbly
  • Firmly press the the crust onto the Parchment Paper lined Baking Dish, ensuring full coverage across the bottom
  • Bake at 350℉ for about 17min, until barely golden brown

Lemon Filling

  • Add the Lemon Zest and White Sugar to a bowl and mix, using your hands, until well combined and fragrant
  • Add the Flour and whisk until well combined
  • Whisk in the Eggs and Lemon Juice until well combined

Combining into Bars

  • Pour the Lemon Filling into the warm crust
  • Bake for another 20-25min at 350℉, until the center is set, and the outsides are slightly jiggly
  • Cool at room temperature for about an hour
  • Chill in the fridge for at least 2 more hours
  • Before serving, sprinkle the Icing Sugar over the bars
