
Andre’s Canada Day Lemon Bars
A nice tasty summer snack, often served at my Canada Day gatherings. Tastes like Lemon Meringue Pie, without the meringue, but in bar format
Equipment
- 1 9×13 Baking Dish (greased)
- Parchment Paper
- 1 Stand Mixer
- 1 Zester
Ingredients
Shortbread Crust
- 1 cup Butter (unsalted, room temperature)
- ½ cup Icing Sugar
- 1 tsp Vanilla
- 2 cup Flour
- ¼ tsp salt
Lemon Filling
- 2¼ cup White Sugar
- 2 tbsp Lemon Zest (about 6-8 small lemons)
- ¼ cup Flour
- 6 Egg
- 1 cup Lemon Juice (from about 8 small lemons)
- 2 tbsp Icing Sugar
Instructions
Shortbread Crust
- Preheat the oven to 350℉
- Line the greased 9×13 Baking Dish with Parchment Paper
- In the Stand Mixer, cream the Butter and the Icing Sugar until well combined
- Add in the Vanilla, Flour and Salt until well combined, and crumbly
- Firmly press the the crust onto the Parchment Paper lined Baking Dish, ensuring full coverage across the bottom
- Bake at 350℉ for about 17min, until barely golden brown
Lemon Filling
- Add the Lemon Zest and White Sugar to a bowl and mix, using your hands, until well combined and fragrant
- Add the Flour and whisk until well combined
- Whisk in the Eggs and Lemon Juice until well combined
Combining into Bars
- Pour the Lemon Filling into the warm crust
- Bake for another 20-25min at 350℉, until the center is set, and the outsides are slightly jiggly
- Cool at room temperature for about an hour
- Chill in the fridge for at least 2 more hours
- Before serving, sprinkle the Icing Sugar over the bars
