- 1 tbsp Olive Oil
- 1 lb Ground Chicken
- 2 Zucchini
- 1 Onion
- 3 cloves Garlic
- ½ tsp Oregano
- 1 can Black Beans (~15oz, rinsed and drained)
- 1 tbsp Balsamic Vinegar
- ½ tsp Salt
Quarter the Zucchini, and cut into ½in slices
Heat the Fry Pan over Medium High heat, and brown the Ground Chicken with the Zucchini, Onion, Garlic and Oregano (about 10-12 minutes)
Drain the fat
Add remaining ingredients, and continue to heat for another 10-15 minutes, until heated through, stirring occasionally
