- 1 lb Angel Hair Pasta
- 1 tbsp Butter (unsalted)
- 1 cup Half and Half Cream
- 1 cup Cheddar Cheese (grated)
- 1 cup Fontina Cheese (grated)
- 1 cup Gruyere Cheese (grated)
- ½ cup Romano Cheese (grated)
- ¼ cup Parsley
- Salt
- Pepper
In the Pot, cool the Angel Hair Pasta, until al dente, and save 1 cup of the pasta water
In the Skillet, at medium-high heat, melt the Butter and combine with the Half and Half Cream
Bring to a simmer, and add the Cheeses and season to taste with Pepper
Reduce heat to low, and mix until well incorporated
Drain the Pasta, and add half to the sauce mix, coating all stands
Add the Parsley and remaining Pasta. If the sauce is too thick, thin with a spoonful of the pasta water
