
Tomato Soup Cake
This is my absolute favourite cake. I’m not sure of the origins of this recipe, but I know for sure that my Grandmaman Plante passed it on to my mother, who has passed it on to me.My birthday and Christmas are not complete with out it!
Equipment
- 1 Cake pan (9×9)
- 1 Bowl (medium)
Ingredients
- ⅓ cup Shortening
- 1 cup White Sugar
- 1 can Tomato Soup (284ml)
- 1 tsp Baking Soda
- 1½ cup Flour
- 1 tsp Cinnamon
- 1 tsp Ground Cloves
- 1 cup Raisins
- Icing (vanilla)
Instructions
- Pre-heat the oven to 325℉
- Add the Baking Soda to the can of Tomato Soup
- In the Bowl, cream the shortening
- Add the White Sugar, and Tomato Soup can to the bowl, and mix well
- Mix in the Flour, Cinnamon, Ground Cloves and Raisin, and ensure everything is well combined
- Pour mixture into the Cake Pan, and bake for 50-60 minutes, testing with a toothpick to ensure proper doneness
- Once cooled, spread on the Vanilla or Cream Cheese icing
