This is my absolute favourite cake. I’m not sure of the origins of this recipe, but I know for sure that my Grandmaman Plante passed it on to my mother, who has passed it on to me.
My birthday and Christmas are not complete with out it!

Equipment

  • 1 Cake pan (9×9)
  • 1 Bowl (medium)

Ingredients
  

  • cup Shortening
  • 1 cup White Sugar
  • 1 can Tomato Soup (284ml)
  • 1 tsp Baking Soda
  • cup Flour
  • 1 tsp Cinnamon
  • 1 tsp Ground Cloves
  • 1 cup Raisins
  • Icing (vanilla)

Instructions
 

  • Pre-heat the oven to 325℉
  • Add the Baking Soda to the can of Tomato Soup
  • In the Bowl, cream the shortening
  • Add the White Sugar, and Tomato Soup can to the bowl, and mix well
  • Mix in the Flour, Cinnamon, Ground Cloves and Raisin, and ensure everything is well combined
  • Pour mixture into the Cake Pan, and bake for 50-60 minutes, testing with a toothpick to ensure proper doneness
  • Once cooled, spread on the Vanilla or Cream Cheese icing
