
White Chicken Chili
This recipe is courtesy of my sister-in-law, and is a great way to warm up on cold winter days
Equipment
- 1 Stock Pot (large)
- 1 Fry Pan
Ingredients
- 1 Onion (chopped)
- 1 tbsp Olive Oil
- 2 cloves Garlic
- 2 cup Chicken Broth
- 1 cup Cream Cheese
- 1¼ cup Corn
- 2 can Cannellini Beans (~400ml/can)
- 2½ cup Chicken Breast (cooked and shredded)
- 1 can Diced Green Chili
- 1½ tsp Cumin
- ½ tsp Paprika
- ½ tsp Oregano
- ¼ tsp Cayenne Pepper (add more for extra spice)
- 1 tsp Cilantro (optional)
Instructions
- In the Fry Pan, saute the Onion in Olive Oil
- Add all ingredients to the Stock Pot, and cook until the cheese is melted, stirring occasionally
